I waited a few days after eating these oysters just to be sure that I wouldn’t get ill so that no one could say I told you so.

They were so fresh and so tasty and so worth it!

I hit my third trimester this week- 28 weeks. For the past few weeks, I have noticed a significant increase in the amount of comments regarding the size of my pregnant belly. I know this isn’t anything new to other pregnant or formerly pregnant women- but there are millions of women out there who somehow think it is a great idea to point out how LARGE a pregnant belly is when they see one.
The conversation usually goes with the offender first asking how much longer I have, or when I’m due. To which I reply- “Oh I’m due in March. I still have 12 more weeks”. This almost always gets me a huge wide eyed look of surprise and some sort of “OMG you SO big!”.
I heard of this before I got pregnant but I had no idea how ridiculously widespread it was- and that the biggest offenders are actually women who’ve been pregnant before.
So for the last 12 weeks of my pregnancy, I’m keeping a running tally.
2. Waitress at the Blow Fly Inn, Gulfport Mississippi. 28 weeks.
Waitress: How much longer?
Me: Oh I’m due in March, I’ve got about 12 more weeks.
Waitress:<<The Face>> Wow! You are ALL baby!! Do you think you’ll even make it to March??
1. Counter Lady at the Ship and Shore, Dauphin Island Alabama. 28 weeks.
Lady: When’s your baby due?
Me: I’m due at the end of March. 12 more weeks.
Waitress:<<The Face>> What??? You SO BIG!!! I’ve never seen a pregnant belly that big before. You’re gonna get so big in 12 more weeks! Oh MY Gawd! And I’ve had four babies- I should know about big bellies! I was never that big.
Thanks, y’all.

We are in Kentucky for a few days visiting the in-laws. James took some time out from our busy schedule to read to the beagles.

Daisy and Huck got a new bed for Solstice. We stopped by the LL Bean outlet on our way out to Kentucky and picked up a new bed for them. This one they love even more than the last- this one has a nice fleece top.
Why did we need a new dog bed? Because a few weeks ago Huck decided he was too cold one night and turned their old dog bed into a sleeping bag! I came down one morning and couldn’t find Huck because he was hidden inside his bed.

And for good measure- here’s both Huck and Daisy trying out Scrappy the mini-pin’s dog bed.

I’m trying to remember how Mom did this exactly. We made the yogurt last week and I’ve been eating it since. I have been wanting to make our own homemade yogurt for months.
Start with a gallon of whole milk in a pot. You can use less fat milk, but we wanted to start with the whole fat experience.
Warm the milk to 160 degrees and then let it cool to 116. (I thought it was 119, but she remembers 116 and neither of us have the cookbook in front of us, so we’ll go with 116).
Once cool- add 2T of active yogurt per quart. So that was something like 8 tablespoons (1/2 cup) for the whole gallon of milk.
Then put the milk in a water bath. We put ours in quart jars in a water bath in the oven. With the oven on low, we checked the temperature periodically, adding warmer water to the bath when needed.
Keep warm 6 hours. At 6 hours we put ours in the fridge, though I think they could have just stayed in the oven overnight. Our yogurt came out a bit thinner than we wanted, so we put it in a colander lined with coffee filters and strained it the next day for a few hours. We ended up with about a quart of liquid removed and the thickest tastiest greek yogurt you can imagine. Incredible.

Straining the yogurt

Mom and Thomas went head to head in an adobo challenge. They each made their best adobo- Thomas sent his with Jenny last week when she visited. Mom and I were baking chickens so we rubbed each chicken with one of the two.
Here are the results:
They both won!

Hot Chai!
James made perfect wonderful chai this weekend using our Kenyan tea leaves I brought back last year. I didn’t have my tea masala spices so he made it up with some cardamom and sugar.

We were headed to Mom’s for the weekend because Jenny was in town for a full weekend of cooking and eating and relaxing- so we cleared out our entire basil patch from the garden. There were rumors that there was going to be a snow shower this weekend and I was worried that the basil would freeze before we could use it all. Turns out that it DID snow not far from our house this weekend. The hell!
Before we headed up to Cecil County, we went out in the ice cold rain and filled up an entire ice chest with basil plants. On Saturday afternoon, we cleared out some space in the kitchen and started pulling leaves off the stalks.

Not very exciting work- but it made the kitchen smell great!
The leftover stalks got sent to the compost pile in the back yard.

We washed and spun out all the fresh leaves. We used a few cups of leaves to make Basil Olive Oil, following this recipe from my brother in law’s blog, Thomas the Accidental Gourmet.

The finished product. Fortunately, we had a bit of French bread left over and finished it off by dipping it in the basil olive oil. So tasty.

With the remaining basil, we wanted to successfully freeze enough basil so we’d have basil all winter. We’ve tried (unsuccessfully) freezing basil before in ice but this year I decided that we should make little basil ice cubes. So we combined the basil and olive oil in the food processor…

and filled the ice cube trays.

Genius! After an overnight in the freezer, we popped them out and stored them in a gallon bag in the freezer. They held up pretty well and are ready for all kinds of creative cooking this winter!

My best friend, Liam, obliges me and tries on the sweater I’ve been working on. I think I had to promise him some Doritos in exchange.

From the hotel we walked from Battery Park up through the World Trade Center site. We met this nice bronze man- who James thought was a real bronze person pretending to be a fake bronze person- he kept waiting for him to move.

We hadn’t been to NY since 2002- so much has changed- but still so much construction. As we were walking we met a man who was working at the site- he stopped James, who had one of his police shirts on, and gave him a rock from the site. It was a really nice moment.

Bonobo checks out the subway.

We took the subway to the Museum of Natural History- spent a few hours wandering around the museum and headed back to the hotel to pick up our car. Jen finished her meetings, so we had a quick lunch before she headed out to the airport and we headed back to Baltimore.

We took a mini vacation in August to NYC because my sister Jen was in town for one night.
We drove up and picked her up from LaGuardia and made our way back from Brooklyn to her hotel in Battery Park- not very fun at 6pm on a weeknight.

From the hotel we were looking directly at the Statue of Libery

We love comfy beds at the Ritz!
